Easy Creamy Potato Bake
Growing up my Mum would make potato bake a lot. It was always so yummy. Loved a bbq with potato bake, or any other meal she would cook it with.
As I became a teenager and started visiting friends and having meals at their places I discovered another potato bake and this is the one I cook now.
I mainly make it when we have a BBQ but I made this to go with our lasagne today as I was reminded about potato bake and didn’t want to wait for summer.
Unfortunately my children don’t have my love for potato bake. That could also be a good thing as there is more for me and Daniel.
Ingredients
600ml whipping cream
Packet of spring vegetable soup
3-5 large potato’s diced
Preheat the oven to 180 degrees Celsius
Roughly dice the potatoes.
In a casserole dish place the cream and stir in the spring vegetable soup. Once well combined, place the potatoes into the casserole dish and mix well.
Cook in the oven for 45 min to 1 hour. The dish is ready when the potatoes are soft.
