How to Make Yummy Pikelets

Pikelets in our house are a staple. They are quick to make and cheap so when you have a lot of people to feed, pikelets are a great filler. Even when unexpected guests drop in, they are quick and easy to feed the extras. Or my favourite is when a child tells me 30 min before school mum, I need to take something to share today for school we are having a class party.

 

These can be eaten hot or cold. Joshua will take a few in his lunch box to school just plain. When the children come home from school if there were any left, they will demolish what is left. Some of them eat them cold straight from the fridge others will zap them in the microwave for a few seconds to take the chill off them.

 

Ingredients

 

Normal size family                             For our family

 

1 cup Self raising flour                       2 Cups Self raising flour

¼ cup of sugar                                   ½ cup of sugar

1 egg                                                   2 eggs

¾ cup milk                                          1 ½ cups milk

 

Combine flour and sugar together. Add egg and milk whisk till you have a smooth batter. If you think your batter is too thick add a little more milk.

 

Put spoonsful of the mix into greased frying pan (if you have a non-stick pan, you may not need to grease it.) on medium to low heat. When bubbles appear on the surface and start popping it’s time to flip your pikelet brown the other side and it is ready.

 

I love to have plum jam and whipped cream on my pikelet. This is my favourite way to eat them. Josh has just butter on his sometimes he eats them plain. Ashley likes jam and cream too but occasionally she will have honey on hers. There are so many combinations of things you can put on them that’s why they are so versatile.

 

I have been experimenting with my pikelets lately. I have made lots of banana ones before. Where I mash up 2 bananas and mix in with the pikelet mix. This is normally when the bananas are starting to go a little soft. This time I made coloured pikelets separated some of the mix and mixed in pink food colouring. So, we ended up with pink pikelets. Doesn’t change the taste just the colour.  Believe it or not the pink ones were all taken to school that morning.

 

 

 

 I haven’t made them because I don’t like berries, but you could try adding different berries to your pikelets. Blueberries are a popular choice. I have been told adding berry flavoured yoghurt and less milk makes a fluffy creamy pikelet.
